Citrus fruit jelly

With this big heat wave, having citrus fruits is a very good idea ! Citrus fruits contain anti-inflammatories but also potassium, fibers and folic acid, as well as antioxidants to help reduce the damages done by the free-radicals in your body.

This dessert served chilled is low in sugar and easy to prepare in advance…

And because we are talking about citrus fruits, I advise you to take the juice of half a lemon with hot water; drink this ‘magic’ potion in the morning few minutes before having breakfast, on an empty stomach: amazing the detox it can do to your liver which has worked all night !

For 4 people.

INGREDIENTS:

  • 3 middle size organic grapefruits.
  • 1 organic orange.
  • 1 organic lime.
  • 1 organic lemon.
  • 1 tsp agar agar.
  • 1/2 cup agave syrup.
  • 15 chopped mint leaves.
  • 1 tbsp vanilla bean powder.
  • 4 pinches of crunched pistachios.
  • 4 squares unsweetened black chocolate, grated.

RECETTE:

  1. Peel 1 grapefruit, the orange and the lemon; remove the white membranes with a sharp knife. Keep the juice, if any, in a pan. Add the chopped mint to the fruits and place them in the fridge, in a sealed container.
  2. In the pan full of juice, add the juice of the two other grapefruits and the lime juice. Add the vanilla bean powder and the agave syrup.
  3. Place the pan on low heat and stir well. Add the agar agar and let it simmer for two minutes while stirring constantly.
  4. Pour the mixture in the containers of your choice and let it cool down. Place them in the fridge in order for the agar agar do transform the liquid into jello (at least one hour).
  5. Serve the jellies topped with fresh fruits, sprinkle with pistachios and if you want some grated chocolate.
