Spinach, hazelnuts, goat cheese & green apple salad


It’s the season for spinach ! And even if spinach does not bring the amount of iron we were told as kids, this vegetable has other benefits to offer !

Spinach would be of the vegetables loaded with glycolipids (after green tea and parsley). Glycolipids are very efficient againt any inflammatory state. Not to mention its antioxidants properties!

I’ve added nut oil to this recipe because I like to emphasize the hazelnut taste in this salad but you can replace it by a regular organic olive oil.

For 2 people.


  • 5 large handful spinach leaves, cleaned.
  • 1 Granny Smith apple, peeled, cored and diced.
  • 1/3 cup chopped hazelnuts.
  • 1/3 cup dry goat cheese, in crumbs.
  • 1 tbsp nut oil.
  • 2 tbsp olive oil.
  • 1 tbsp white balsamic vinegar.
  • The juice of half a lemon.
  • Guérande salt and pepper


  1. Pour some lemon juice on the apple dices to prevent them from darkening.
  2. In a bowl, mix the spinach, the hazelnut bits, the goat cheese crumbs, the apple dices, the oil and vinegar.
  3. Season to taste.
