Mixed greens, roasted pears & parmesan biscuits

We have been, for the last past weeks, slowly leaving Winter and entering Spring…and we want lightness and colors in our plates! Here’s a salad to fulfill your needs with greens, colorful roasted pears and home made delightful parmesan ‘tuiles’.

INGREDIENTS :

  • 2 large handful of mixed greens (I’ve used a mix of green salad, beetroot leaves and rucola), washed and dried.
  • 2 small pears, cut into quarters and those quarters in halves.
  • 2 cups grated parmesan.
  • 4 tbsp maple syrup.
  • 4 tbsp water.
  • olive oil.
  • balsamic vinegar.
  • salt and pepper.

RECIPE:

1. Preheat your oven to 300°F.

2. In an oven dish, place the pear bits, the maple syrup and the water.

3. Let the pears roast till they are tender and slightly golden. Turn them so both sides are golden.

4. In another dish, make some grated parmesan circles and make rounder shapes with the back of a spoon.

5. Let them bake till they are also slightly golden (careful not to burn, the parmesan biscuits will have a burnt and bitter taste).

6. Let them cool down before retrieving them with a spatula.

7. In the plates, place the salad, the pears and some parmesan biscuit crumbs.

8. Sprinkle with some olive oil and balsamic vinegar, add salt and paper to taste.
