Quinoa, Kale, Pomegranate, Pistachios & Raisins

Here’s a recipe with amazing benefits for your health!

Firstly pomegranate, loaded with key vitamins such as C, B5, A and E, but also minerals such as potassium and folic acid. Pomegranate seeds are full of antioxidants fighting free radicals and the aging of your cells.

I’ve already glorified avocado in previous recipes with its fibers and antioxidants, not to mention the benefits of kale, quinoa … what are you waiting for? This salad is a ‘must-do’ for Summer !

Pour 2 Personnes.

Ingredients:

  • 1 cup quinoa
  • 1 peeled pomegranate
  • 1 avocado, peeled, stoneless and diced. Drizzle it with the juice of half a lemon
  • 1/3 cup pistachios
  • 1 cup kale baby leaves, chopped
  • 1/3 cup raisins
  • 1 handful parsley leaves, chopped
  • 1 tsp Meaux mustard
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Guérande salt and pepper

Recipe:

  1. Cook the quinoa in salted water, drain and set aside
  2. Peel the pomegranate and set aside
  3. Prepare the vinaigrette and mix the vinegar, the oil and the Meaux mustard
  4. In a bowl, mix the quinoa, the avocado, the pomegranate, the raisins, the parsley, the kale and the vinaigrette
  5. Stir well, season to taste and serve chilled
