Roasted quinces

When you find quinces, you often wonder how you’re going to eat them. At the beginning, you might even confuse them with a large pear… but quinces have a much thicker skin and their tastes have nothing in common!

Quinces are eaten cooked (inedible when raw) and made into a compote, jam or jelly.

Here’s a recipe where quinces are roasted and caramelized in their own juice (and pectin). Add some cloves and star anise and there you go: a delicious, simple, healthy and seasonal dessert.

Pour 4 personnes.

Ingredients:

  • 4 small quinces (or two large ones), peeled, cored and cut into quarters
  • 500 ml water
  • 4 cloves
  • 2 star anise
  • 1/2 of a lemon juice
  • 4 tbsp maple syrup and some extra to serve

Recipe:

  1. Preheat your oven to 350°F
  2. Place the quinces into an oven-proof dish
  3. Add the water mixed with the maple syrup and the lemon juice
  4. Add the cloves and the star anise
  5. Let the quinces roast till they are caramelized. With a tbsp, wet them frequently with their own juice (and pectin)
  6. Serve tepid or warm and add some extra maple syrup if you want
